Almond Butter Cookies

  • 200g ground almonds (1,4 cups)
  • 125g soft butter or ghee (0,6 cups)
  • 1.5-2 ripe bananas
  • 1 egg
  • approx. 3 tbsp coconut or almond flour (as required)
  • 1 egg yolk

  • Grind the almonds.
  • Mix with butter or ghee (soft), banana and egg to make a dough.
  • If the dough doesn’t form a ball yet, add more coconut or almond flour.
  • Chill for about 30 minutes.
  • Cut out the dough into cookies. Use almond or coconut flour for this.
  • Coat with egg yolk and if wanted decorate with nuts or raisins.
  • Bake at 340 degrees fahrenheit for 7-10 minutes until golden.
