Instructions

  • Mix the flour in a container with kefir and water, cover loosely and leave out at room temperature for 12-24h.
  • Whisk together the eggs, salt, maple syrup, and melted butter until the mixture is slightly fluffy.
  • Then add the baking soda, the fermented flour and the cinnamon.
  • Stir the cut apple pieces into the batter.
  • Pour the batter into the muffin tins and bake at 325 degrees Fahrenheit (165 degrees Celcius) for about 1 hour or until a toothpick can be removed cleanly from the muffins.
